Acetic bacteria, used for changing alcohol into vinegar, need nutrients to be able to develop
Bacteria find most of the minerals, sugars and vitamins they need in wine, cider and many other fruit wines (alcoholic fruit-based substrates). However, in some critical cases, the use of BIONYL 20 is necessary.
However, in order to produce alcohol vinegar, the substrate is too weak to allow the natural development of bacteria. That is why we recommend you use BIONYL 901.
